From Our Kitchen, To Yours...

Reece and I both love to cook, and our secret (or not so secret) dream is to open a restaurant together featuring our original culinary creations. Here are some samples of our recent inventions...


Wrapped a'la Reece:



1 Whole Wheat Roll Up wrap
1/2 c. egg beaters (Jess style) or 3 eggs, scrambled
1 slice deli honey turkey
Athenos Original Greek hummus
Salsa
Avocado

Heat wrap for 30 seconds in the microwave, spread hummus, avocado and a splash of salsa while still warm.

Layer with turkey.

Season eggs with cajun, ground pepper and rosemary.

Drop scrambled, seasoned eggs on top of turkey...wrap it all up...devour promptly.

NOTE: Diet Dr. Pepper enhances enjoyment.

Ok, so it may not look all that appealing, but believe me, the blend of flavors is fantastic. Also, for my fellow health nuts, this low-fat breakfast (lunch or dinner too) is loaded with protein and fiber, keeping even the most dedicated munchers full for hours. Reece skillfully thought this one up and first made it for me on my birthday.

Sunday Spring Salad:



Spinach
Chicken Breast
Edamame, shelled
Carrots
Balsamic Vinegar
Cut chicken breast into chunks, cook in olive oil and lemon pepper in a skillet...let cool

Toss spinach, sliced carrots, and edamame...add cooled chicken

Add balsamic vinegar (or Newman's Own Balsamic Vinaigrette) and devour promptly

We created this fabulous salad after our Sunday jaunt around Temple Square. Apparently in our household, sunshine=salad. I will be honest- I think this is the first salad we have made together as a married couple. What can I say, we like cereal!

So there you have it...just some easy ideas for the healthy at heart (or not so healthy. Reece's favorite post-workout snack is powdered donuts). Enjoy!
